Blonde, bright, 6% ABV—Nova stands out as the ambitious younger sister of the legendary Paix Dieu.

Some beers are born from centuries-old tradition, while others are born from obsession. Paix Dieu Nova is a bit of both.

Launched in September 2023 by the Belgian brewery Caulier, based in Péruwelz in Hainaut, Nova builds on the legacy of the classic Paix Dieu—that 10% triple inspired by the Cistercian recipes of the abbey of the same name. Except that here, the master brewers sought to create a beer that didn’t yet exist: neither too bitter nor too mellow, accessible in terms of aroma, yet full of character. The result: 23 test brews and a beer that Guillaume Coulon, Caulier’s quality director, describes himself as the most complicated to create at the brewery.

In the glass, Nova displays a luminous golden color topped with a fine, persistent head. On the nose, fruity and slightly spicy aromas, with citrus and yeast notes typical of Belgian beers. On the palate, it sits somewhere between a thirst-quenching lager and an abbey beer—a missing link between a traditional lager and abbey beers.

This 6% ABV is no accident. The market demands less potent beers, and Caulier has understood this well.
